Directions

  1. Combine the chickpeas, tahini, beet, lemon juice, garlic, cumin, and salt in a food processor
  2. While processing, slowly drizzle in the olive oil and blend until smooth
  3. Serve in a bowl and sprinkle with desired toppings

  • 4-Feb ea roasted beets, peeled & chopped
  • 1 can ea Urban Meadow® chickpeas, drained
  • 2/3 cup ea tahini
  • 1/3 cup ea Urban Meadow® lemon juice
  • 2 cloves ea garlic, chopped
  • 1/3 cup ea Urban Meadow® olive oil
  • 1 teaspoon ea cumin
  • 1 teaspoon ea kosher salt
  • 1 handful chopped ea herbs
  • Optional Toppings: ea Parsley, pine nuts, lemon zest, and thinly sliced radishes
