Directions

  1. Preheat your oven to 400°F (200°C)
  2. Cut sweet potato into half-inch thick round slices. Drizzle sweet potato with olive oil, salt and pepper, toss evenly to coat. Place sweet potato rounds on a baking sheet
  3. Bake for about 20-25 minutes or until the sweet potatoes are tender and slightly crispy at the edges
  4. Place a small piece of Brie on each round, allowing the residual heat to melt it slightly. Sprinkle dried cranberries and chopped walnuts over the Brie
  5. Return the baking sheet to the oven for an additional 5-7 minutes, or until the Brie is melted, and the toppings are warmed through
  6. Drizzle honey over the sweet potato rounds for a touch of sweetness
  7. Garnish with fresh rosemary for a pop of color and added flavor. Serve sweet potato rounds warm as a delightful appetizer or side dish
