Directions

  1. Preheat your oven to 375°F
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds and fibers. Drizzle the cut sides with a little olive oil and season with salt and pepper
  3. Place the squash halves, cut side down, on a baking sheet. Roast in the preheated oven for about 35-45 minutes or until the squash is tender and you can easily pierce the skin with a fork
  4. While the squash is roasting, heat 2 tablespoons of olive oil in a skillet over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant
  5. Let spaghetti squash cool slightly, then scrape into noodles with a fork. Add to the skillet with sautéed garlic and toss for a few minutes to combine and heat through
  6. Stir in the fresh basil and grated Parmesan cheese. Continue to cook for another 2-3 minutes, or until the cheese is melted and the basil is fragrant. Season with salt and pepper to taste
  7. Serve your Spaghetti Squash with fresh basil and Parmesan immediately and enjoy!
