Directions

  1. Preheat oven to 350 degrees F
  2. Fill each section of a greased cupcake pan with ¼ cup of blueberries, topping with 1 tsp of brown sugar, and 1 tbsp of walnuts
  3. To a large bowl, combine cake mix and vanilla cream soda, and mix until smooth
  4. Using an ice cream scoop, pour 1 scoop of cake and soda mix into each section of pan
  5. Bake for 25 minutes, then remove from oven and let cool for 5 minutes
  6. Cover with a cutting board and flip over to remove mini blueberry cakes
  7. Sprinkle powdered sugar and a dollop of whipped topping, and serve!

  • 3 cups ea fresh or frozen blueberries
  • 3/4 cup ea Urban Meadow walnuts
  • 1/4 cup ea Urban Meadow brown sugar
  • 1 ea box yellow cake mix
  • 1 ea can vanilla cream soda
  • 1/2 cup ea powdered sugar
  • 1 ea can Urban Meadow whipped topping
