Pumpkin Spice Cookies - Urban Meadow

Directions
- Preheat oven to 375ºF. In a bowl, add the butter and shortening. Using a mixer, blend until smooth then add the sugars and mix for at least 1-2 minutes. Mix in salt, vanilla extract, egg and vinegar
- In a separate bowl, whisk together the baking soda, flour, ginger, cinnamon, nutmeg, and cloves. Add to the wet ingredients and mix on low until combined. If using, stir in the butterscotch chips
- Scoop rounded tablespoons of dough onto a parchment lined baking sheet and bake for 8 minutes. Let cool then enjoy!

- 1 ea large Urban Meadow egg
- 1 tsp ea apple cider vinegar
- 1 tsp ea Urban Meadow baking soda
- 2 cups ea flour
- 1/2 tsp ea ginger
- 1 tsp ea cinnamon
- 1/4 tsp ea nutmeg
- 1/2 tsp ea ground cloves
- butterscotch chips, ea optional
