Directions

  1. Cook quinoa according to package instructions. When done, pour into a serving bowl and set aside until room temperature
  2. While quinoa is cooling, in a small bowl, whisk vinegar, honey, olive oil, mustard, and garlic powder until combined to make a vinaigrette
  3. Combine apples, celery, green onions, walnuts, cranberries, salt and pepper to taste
  4. Pour vinaigrette over the salad and stir until combined then serve

  • 1 cup ea Urban Meadow organic quinoa
  • 1/2 cup ea celery, diced
  • 2 ea green onions, sliced
  • 1 ea granny smith apple, diced
  • 1/3 cup ea walnuts, chopped
  • 1/3 cup ea dried cranberries
  • 2 tbsp ea apple cider vinegar
  • 1 tbsp ea Urban Meadow honey
  • 1 tbsp ea Urban Meadow olive oil
  • 2 tsp ea Urban Meadow Dijon mustard
  • 1/4 tsp ea garlic powder
  • 1/2 tsp ea Urban Meadow salt and pepper, to taste
