Chicken Pad Thai - Urban Meadow

Directions
- Cook rice noodles per package instructions, drain, and set aside
- Heat 1 tbsp oil in a pan, cook chicken until browned, remove, and set aside
- Scramble eggs in the same pan, remove, and set aside with chicken
- In a small bowl, mix soy sauce, peanut butter, lime juice, and honey
- Add chicken, eggs, and noodles to the pan, pour sauce over, and toss to combine
- Garnish with crushed peanuts, serrano peppers, cilantro, and lime wedges. Serve and enjoy!

- 2 ea Urban Meadow chicken thighs, thinly sliced
- 2 tbsp ea Urban Meadow vegetable oil
- 2 ea large Urban Meadow eggs
- 8 oz. ea rice noodles of choice
- 3 tbsp ea Urban Meadow soy sauce
- 1 tbsp ea Urban Meadow creamy peanut butter
- 1 tbsp ea lime juice
- 1 tsp ea Urban Meadow honey
- 2 tbsp ea Urban Meadow crushed peanuts
- Lime wedges, Serrano pepper, and fresh cilantro, ea to garnish
