Directions
- In a large bowl, whisk together olive oil, lemon juice, lemon zest, garlic, salt, and pepper. Add the garbanzo beans, olives, cherry tomatoes, red onion, cucumber, parsley, and feta cheese to the bowl
- Toss everything together until well-coated with the dressing. Let the salad sit at room temperature for 30 minutes to allow the flavors to develop, or cover and refrigerate for up to 2 days

- 1/3 cup ea Urban Meadow extra virgin olive oil
- 2 tbsp ea Urban Meadow lemon juice
- Zest ea of 1 lemon
- 1 ea garlic clove, minced
- 1 tsp ea Urban Meadow salt and pepper
- 2 ea (15.5 oz) cans Urban Meadow garbanzo beans, rinsed and drained
- 1 ea (6 oz) can Urban Meadow ripe pitted olives, drained
- 2 cups ea cherry tomatoes, halved
- 1 cup ea chopped fresh parsley
- 1 cup ea (4 oz) crumbled feta cheese
- 1/2 cup ea red onion, thinly sliced
- 1 ea cucumber, diced
