Directions

  1. Preheat oven to 375°F. Line a muffin pan with paper liners or lightly grease
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt
  3. In a separate bowl, mix oil, milk, egg, and vanilla until well combined
  4. Pour wet ingredients into the dry ingredients and stir just until combined don’t overmix
  5. Gently fold in the shredded coconut
  6. Divide the batter evenly into the 12 muffin cups
  7. In a small bowl, mix brown sugar and cinnamon, then sprinkle over each muffin for a sweet, spiced top
  8. Bake for 18–20 minutes, or until the tops are golden and a toothpick comes out clean
