Directions
- Cook orzo in salted boiling water according to package instructions until al dente. Drain and rinse briefly under cool water
- In a large bowl, whisk olive oil, lemon juice, lemon zest, minced garlic, salt, and pepper. Add cooked orzo to the bowl and toss to coat. Fold in chopped basil and Parmesan. Enjoy as a light meal or a side dish!
