Directions

  1. Cook orzo according to package instructions. Drain, rinse with cold water, and let cool
  2. In a large bowl, combine cooled orzo, feta, olives, tomatoes, bell pepper, scallions, and parsley
  3. In a small bowl, whisk together olive oil, vinegar, lemon juice, mustard, salt, and pepper
  4. Pour dressing over the salad and toss gently to coat. Chill for 10–15 minutes if desired, then serve, enjoy!

  • ¼ cup ea chopped fresh parsley

  • 1 tbsp ea Urban Meadow red wine vinegar
  • 1 tbsp ea Urban Meadow lemon juice
  • 1 tbsp ea Urban Meadow Dijon mustard
