Spinach Pie - Urban Meadow®

Directions
- Preheat oven to 375 degrees F
- Melt butter and 1 Tbsp olive oil in a pan over medium heat. Sauté shallots or onion until translucent, 3–4 min. Season with salt and pepper. Stir in spinach and cook 2–3 min. Add dill if using, then remove from heat. Stir in scallion greens, let cool
- Brush a 16x9 baking pan with olive oil. Roll puff pastry to about 18x11 to fit bottom and sides. Lay one sheet in pan with edges hanging over. Prick dough with a fork (“dock”) and set aside
- Once the spinach-onion mixture has cooled, add in ricotta cheese, crumbled feta, egg and salt & pepper to taste. Stir until all ingredients are evenly mixed

- 1 1/2 cups Urban Meadow® ricotta cheese
- 1 tablespoon Urban Meadow® salted butter
- 1 cup crumbled feta cheese
- 1 tablespoon green scallions
- 1 medium onion, chopped
- 2 sheets puff pastry dough
- sprinkle of salt and pepper
