Directions

  1. Heat oven to 450°F
  2. Heat olive oil in an oven-safe skillet over medium heat. Add in white onion and bell pepper & cook until onion is translucent & pepper is tender about 15-20 minutes
  3. Add in minced garlic & stir in cumin, paprika and cayenne pepper and cook for another minute
  4. Stir in tomatoes and crushed red pepper flakes and cook until sauce has thickened, about 10 minutes
  5. Carefully crack eggs into skillet over tomato sauce, Season with salt & pepper & top with crumbled feta
  6. Transfer skillet to oven and bake until eggs they are cooked to your liking
  7. Garnish with fresh cilantro & serve with crusty bread for dipping. Enjoy!

  • 3 Cloves garlic, minced
  • 1 cup Crumbled feta cheese
  • 1 teaspoon Crushed red pepper flakes
  • 4 Eggs
  • A loaf of Fresh Italian bread
  • ½ teaspoon Ground cayenne
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground paprika
  • 1 large Red bell pepper, chopped
  • A sprinkle of Salt & Pepper, to taste
  • 2 tablespoons Urban Meadow® olive oIl
  • 1 (28 Oz) can Urban Meadow® organic crushed tomatoes
  • 1 large White onion, chopped
