Spaghetti Carbonara – Urban Meadow

Directions
- Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Reserve about 1 cup of pasta cooking water, then drain the spaghetti
- In a bowl, whisk together the eggs, grated parmesan cheese. Season with a generous amount of freshly ground black pepper
- In a large skillet, heat the olive oil over medium heat. Add the diced bacon and cook until it becomes crispy, about 4-5 minutes
- Reduce the heat to low and add the drained spaghetti to the skillet, tossing to coat in the rendered bacon fat
- Remove the skillet from heat and quickly pour the egg and cheese mixture over the pasta, tossing continuously to create a creamy sauce. If needed, add a bit of the reserved pasta water to achieve the desired consistency
- Season with additional black pepper and salt if necessary. Serve immediately, garnished with extra grated cheese if desired
