Directions

  1. Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Reserve about 1 cup of pasta cooking water, then drain the spaghetti
  2. In a bowl, whisk together the eggs, grated parmesan cheese. Season with a generous amount of freshly ground black pepper
  3. In a large skillet, heat the olive oil over medium heat. Add the diced bacon and cook until it becomes crispy, about 4-5 minutes
  4. Reduce the heat to low and add the drained spaghetti to the skillet, tossing to coat in the rendered bacon fat
  5. Remove the skillet from heat and quickly pour the egg and cheese mixture over the pasta, tossing continuously to create a creamy sauce. If needed, add a bit of the reserved pasta water to achieve the desired consistency
  6. Season with additional black pepper and salt if necessary. Serve immediately, garnished with extra grated cheese if desired

  • 2 tbsp ea Urban Meadow olive oil
