Directions

  1. Cook rice noodles per package instructions, drain, and set aside
  2. Heat 1 tbsp oil in a pan, cook chicken until browned, remove, and set aside
  3. Scramble eggs in the same pan, remove, and set aside with chicken
  4. In a small bowl, mix soy sauce, peanut butter, lime juice, and honey
  5. Add chicken, eggs, and noodles to the pan, pour sauce over, and toss to combine
  6. Garnish with crushed peanuts, serrano peppers, cilantro, and lime wedges. Serve and enjoy!

  • 2 ea Urban Meadow chicken thighs, thinly sliced
  • 2 tbsp ea Urban Meadow vegetable oil
  • 2 ea large Urban Meadow eggs
  • 8 oz. ea rice noodles of choice
  • 3 tbsp ea Urban Meadow soy sauce
  • 1 tbsp ea Urban Meadow creamy peanut butter
  • 1 tbsp ea lime juice
  • 1 tsp ea Urban Meadow honey
  • 2 tbsp ea Urban Meadow crushed peanuts
  • Lime wedges, Serrano pepper, and fresh cilantro, ea to garnish
