New Mexico-Style Slow Cooker Pulled Pork-Green Chile Tacos - Coca-Cola®

Directions

  1. In a saucepan, heat oil over medium-high heat. Add peppers and onion; cook 5 min until soft. Stir in garlic; cook 1 min. Transfer pepper mixture to blender; add coffee and blend on high until smooth. Makes 1¼ cups.
  2. In a slow cooker, mix pork and pepper mixture. Cover and cook on high 4 hours or low 8 hours until tender. Shred pork in slow cooker. Stir in beans with their juice, cover and cook 10-20 min until heated. Makes 3 cups.
  3. Prepare salad kit as label directs
  4. Serve pork mixture in tortillas topped with tomatoes, cilantro and salad kit

  • 2 poblano peppers, seeded and chopped
  • 1/2 medium white onion, chopped
  • 3 garlic cloves, minced
  • 1/4 cup strong brewed coffee
  • 1 1/2 lbs boneless country-style pork ribs, cut into 1 1/2-inch pieces
  • 1 (8.3 oz) can baked beans
  • 1 (12 oz) pkg chipotle and cheddar chopped salad kit
  • 12 (6 inch) flour tortillas
  • 2 Roma tomatoes, chopped
  • 1/4 cup cup fresh cilantro leaves
