Directions
- In a saucepan, heat oil over medium-high heat. Add peppers and onion; cook 5 min until soft. Stir in garlic; cook 1 min. Transfer pepper mixture to blender; add coffee and blend on high until smooth. Makes 1¼ cups.
- In a slow cooker, mix pork and pepper mixture. Cover and cook on high 4 hours or low 8 hours until tender. Shred pork in slow cooker. Stir in beans with their juice, cover and cook 10-20 min until heated. Makes 3 cups.
- Prepare salad kit as label directs
- Serve pork mixture in tortillas topped with tomatoes, cilantro and salad kit
