Directions

  1. In a pan over medium high heat, sauté the onions until they begin to golden, about 5 minutes. Add in the ground beef and cook for 5 minutes until cooked all the way through. Stir in eggs, salt, pepper, garlic powder, oregano, and olives. Set aside
  2. In a pot, boil potatoes over high heat for 15 minutes or until fork tender. Drain the potatoes, mash, add 3 tbsp butter and milk and stir until creamy
  3. Heat oven to 375ºF. Use leftover butter to grease a shallow baking dish. Cover the bottom of the dish with a layer of mashed potatoes. Top with meat mixture and then cover completely with remaining mashed potatoes. Sprinkle top with parsley and cheese
  4. Bake for 35 minutes or until potatoes are nicely browned on top and cheese has melted. Let cool then slice and serve!

  • 2 tbsp Urban Meadow olive oil
  • 1 onion, diced
  • 2 lbs. ground beef
  • 2 tsp fresh oregano
  • 2 tsp Urban Meadow salt and pepper
  • 2 Urban Meadow eggs, boiled, chopped
  • 2 to 4 tbsp Urban Meadow unsalted butter
  • 1 cup milk
  • 1 tbsp garlic powder
  • 4 large potatoes, peeled, and cut into 2-inch chunks
  • 2 tbsp fresh parsley, chopped
  • 1/2 cup Urban Meadow manzanilla olives, halved
  • 1/4 cup Urban Meadow shredded mozzarella (or cheese of your choice)
