Pastel De Papas - Urban Meadow

Directions
- In a pan over medium high heat, sauté the onions until they begin to golden, about 5 minutes. Add in the ground beef and cook for 5 minutes until cooked all the way through. Stir in eggs, salt, pepper, garlic powder, oregano, and olives. Set aside
- In a pot, boil potatoes over high heat for 15 minutes or until fork tender. Drain the potatoes, mash, add 3 tbsp butter and milk and stir until creamy
- Heat oven to 375ºF. Use leftover butter to grease a shallow baking dish. Cover the bottom of the dish with a layer of mashed potatoes. Top with meat mixture and then cover completely with remaining mashed potatoes. Sprinkle top with parsley and cheese
- Bake for 35 minutes or until potatoes are nicely browned on top and cheese has melted. Let cool then slice and serve!

- 2 tbsp Urban Meadow olive oil
- 1 onion, diced
- 2 lbs. ground beef
- 2 tsp fresh oregano
- 2 tsp Urban Meadow salt and pepper
- 2 Urban Meadow eggs, boiled, chopped
- 2 to 4 tbsp Urban Meadow unsalted butter
- 1 cup milk
- 1 tbsp garlic powder
- 4 large potatoes, peeled, and cut into 2-inch chunks
- 2 tbsp fresh parsley, chopped
- 1/2 cup Urban Meadow manzanilla olives, halved
- 1/4 cup Urban Meadow shredded mozzarella (or cheese of your choice)
