Directions
- Whisk together olive oil, mint, white wine vinegar, honey, salt, and pepper
- Toss greens and chopped melon with olive oil mixture, and top with prosciutto, fresh mozzarella, and chopped pistachios

- 6 tbsp fresh mint, chopped
- 3 tbsp white wine vinegar

- 10 cups baby greens, loosely packed
- 2-Jan honeydew melon; peeled, seeded, and coarsely chopped
- 1 prosciutto, 4oz
- 1 Urban Meadow® fresh mozzarella ball
- 1/2 cup pistachios, coarsely chopped
