  1. Whisk together olive oil, mint, white wine vinegar, honey, salt, and pepper
  2. Toss greens and chopped melon with olive oil mixture, and top with prosciutto, fresh mozzarella, and chopped pistachios

  • 6 tbsp fresh mint, chopped
  • 3 tbsp white wine vinegar
  • 3 tbsp Urban Meadow® organic honey
  • 10 cups baby greens, loosely packed
  • 2-Jan honeydew melon; peeled, seeded, and coarsely chopped
  • 1 prosciutto, 4oz
  • 1 Urban Meadow® fresh mozzarella ball
  • 1/2 cup pistachios, coarsely chopped
