Directions

  1. Place chopped tomatoes in a colander with a pinch of salt. Let sit for 10 minutes, then gently press to remove excess liquid
  2. In a mixing bowl, combine drained tomatoes, red onion, parsley, mint (if using), flour, baking powder, oregano, salt, and pepper. Mix until a thick batter forms
  3. Heat ¼ inch of vegetable oil in a skillet over medium heat. Drop heaping tablespoons of batter into the hot oil, flattening slightly with a spatula. Fry for 2–3 minutes per side, or until golden brown and crisp
  4. Transfer to a paper towel- lined plate to drain. Serve warm with Urban Meadow tzatziki (find the recipe in our recipe center!)

  • 3 ripe tomatoes, finely chopped
  • ½ small red onion, finely chopped
  • ¼ cup fresh parsley, chopped
  • 2 tbsp fresh mint, chopped
  • ½ cup Urban Meadow all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp dried oregano
  • Urban Meadow salt and pepper to taste
  • Urban Meadow vegetable oil for frying
