Directions

  1. In a large bowl, whisk together olive oil, lemon juice, lemon zest, garlic, salt, and pepper. Add the garbanzo beans, olives, cherry tomatoes, red onion, cucumber, parsley, and feta cheese to the bowl
  2. Toss everything together until well-coated with the dressing. Let the salad sit at room temperature for 30 minutes to allow the flavors to develop, or cover and refrigerate for up to 2 days

  • 1/3 cup Urban Meadow extra virgin olive oil
  • 2 tbsp Urban Meadow lemon juice
  • Zest of 1 lemon
  • 1 garlic clove, minced
  • 1 tsp Urban Meadow salt and pepper
  • 2 (15.5 oz) cans Urban Meadow garbanzo beans, rinsed and drained
  • 1 (6 oz) can Urban Meadow ripe pitted olives, drained
  • 2 cups cherry tomatoes, halved
  • 1 cup chopped fresh parsley
  • 1 cup (4 oz) crumbled feta cheese
  • 1/2 cup red onion, thinly sliced
  • 1 cucumber, diced
