Zucchini Breakfast Cups - Urban Meadow

Directions
- Preheat oven to 350°F. Using a basking brush, brush each section of a muffin tray with olive oil
- Peel each zucchini into long strips. Line each muffin cup with 2 zucchini strips. Crack 1 egg into each muffin cup. Top with chopped tomato, chives, salt and pepper
- Bake for 20 minutes or until egg whites are cooked. Remove from oven and enjoy!

- 2 ea large zucchinis
- 12 ea large eggs
- 1 ea large tomato, chopped
- 1/4 cup ea Urban Meadow olive oil
- 3 tbsp ea chives, finely chopped
- Urban Meadow salt and pepper, ea to taste
